Nothing beats cooking over fire, especially when you’re grilling Easter BBQ lamb chops. Simple ingredients, bold flavour and that unbeatable smoky finish. Here's a quick recipe to use on your BBQ this Easter weekend!


Ingredients:

- 8-12 lamb chops
- 700g new potatoes 
- Firefly BBQ Greek Gyro Rub
- Cumin (1 tsp)
- Butter (30g)
- Fresh Coriander
- Fresh Mint
- Lemon
- Salt & Pepper

Method:

Start by seasoning your lamb chops generously with Greek Gyro rub from Firefly BBQ. Let that sit while you get everything else going.

Light your Kadai Fire Bowl and bring it up to a good high heat (approx 230°C) Always use good quality lumpwood charcoal, we use Big K (you can also use briquettes but lumpwood is our preference for a nice clean burn).

Meanwhile, parboil your new potatoes in salted water. You’re looking for al dente - soft enough to take flavour, but still holding their shape.

Drain the potatoes and toss them straight back into the pan with:

- A good sprinkle of cumin (1 tsp)
- Salt & pepper
- A knob of butter (30g)
- A generous squeeze of fresh lemon juice

Give everything a shake so the potatoes are well coated.

Now for the star of the show - get your lamb chops onto the grill. Cook over high heat, directly over the fire, making sure to render down that fat properly for maximum flavour.

As soon as you see the blood rise to the surface of the meat, take the lamb off the heat. Lay the chops over the warm potatoes in a Kadai skillet and place on the cooler side of the fire (indirect). Let them rest there for approx 5-10 minutes. This is where the magic happens, as all those juices from the lamb soak into the potatoes.

For medium rare lamb, pull from the heat when the internal temperature reaches 54°C - 57°C. Rest until around 60°C. To monitor our temps we used a Meater Pro temperature probe.


For best results, always cook to temperature and not time!


Finally, garnish the lamb and potatoes with freshly chopped coriander and mint. Serve up with peas or a side salad and enjoy something seriously special straight from the fire!
